These seriously large shells are simply ideal for serving stuffed with your favourite filling!

To cook, gently place into boiling water and simmer for about ten minutes. Drain (don't stir/mix them as they might break) and then place them in a bowl of cold water. Take each shell and fill them individually (with a filling of your choice such as ricotta cheese, with creamed spinach, crab, mussels, other shellfish, pureed pumpkin or butternut squash, mozzarella and ham....... really with any filling). Place each filled Conchiglioni in an oven proof dish. Add sauce of your choice, and top with Parmesan or other cheese before putting into a pre-heated oven (180 Deg/Gas Mark 5) for around 30 minutes. To serve: take each shell individually from the dish and place on serving plate - perhaps just five filled Conchiglioni as a starter, more if it is to be served as a main course. Add garnish as required.
