Ingredients (single serving):
50 grams Ricotta Cheese (if not available use Curd Cheese)
50 grams Cooked Spinach (either fresh or frozen leaf spinach)
1/4 (quarter) cup of milk
Pinch of grated nutmeg
Salt and Pepper to taste
Gnocchi or Pasta (Glutenfree of course!)
Chop the cooked spinach and put into a bowl. Add the ricotta cheese, milk, salt and pepper and grated nutmeg. Mix well to form a cream.
Cook pasta of your choice - we reccommend Gnocchi, Perle di Gnocchi (really good if Perle di Gnocchi is mixed with Spinach Gnocchi), gluten free Orechiette, gluten free Tagliatelle, Sagnette, or try with Chittarrine.
Put the cooked gnocchi or pasta of your choice into a warmed serving dish and top with the Salsa Verde sauce. Serve immediately.
